Quick Beet Salad
1 can of beets, drained and diced
2 cups mixed greens
1/4 cup chopped walnuts
1/4 cup diced red onion
2 tablespoons balsamic vinegar
1 tablespoon olive oil
Salt and pepper
In a large bowl, mix together the beets, mixed greens, walnuts, and red onion.
In a small bowl, whisk together the balsamic vinegar, olive oil, salt, and pepper. Pour the dressing over the salad, and toss to coat.
Serve the salad immediately.
